My pink casserole!

This is awesome (some of you might be disgusted)! I was making a chicken and wild rice casserole and realized I had beets in the fridge that I needed to use up before they went bad… so I grated them into the casserole (which we all know is SUPER HEALTHY b/c of what you read HERE) and it turned PINK! How great would this be for a birthday dinner for a little girl!!!

    I how did it go over with the family? I haven’t ventured to add beets to anything (except powdered dried beets to icing to make it pink), I just steam them. I do although add lots of veggies like spinach, chard and kale with peas, green beans, carrots or broccoli to my meats and then serve over Tinkyada pasta or rice. They are used to that, but I am not sure how this would go over.
