Another good one!
Made this up last night for dinner- so good, so healthy, and used things in the fridge! I named them Southwestern baked ravioli.
Shredded chicken from a rotisserie (CHEAP from Sam’s Club- get one every time I go!), shredded cheese, corn, black beans, spinach, avocado, a shot of sour cream, and some spices to your liking (I used a bit of Paprika, Red cayenne, and a dash of hot sauce). 
Put the mix in won ton wraps as though I was making ravioli, sprayed a cookie sheet, laid them on it, sprayed them, and baked for maybe 10 minutes (until crispy) at 400 degrees! 

YUM! Even the boy liked them! Yay for another way to get veggies in his tummy!

PS- I fried one to taste the difference and the only noticeable difference was that I could feel my arteries clogging with the fried one which defeated the whole purpose of a healthy meal!
